EAT: avocado toast



Here's my avocado motto: you can never have enough avocado.  Such smooth, rich creaminess packed full of fiber, potassium, vitamins C, K, folate and B6.  Half an avocado contains 15 grams of heart-healthy unsaturated fat.  Fat that's good for you?!  Why wouldn't you be stuffing yourself silly with this delicious stuff?

I always try to keep a couple on hand, and one of my favorite breakfast/lunch/snacks to make is avocado toast.  This is especially the case when I'm strapped for time since it's so quick and easy to make!



Here's the fun part - you can use whatever you have on hand to add as toppings.  No worries if you don't have anything aside from the avocado and toast - it's still so simply delicious on its own.

Ingredients:
  • Avocado
  • Bread
  • Coarse salt, pepper
  • Optional ingredients
    • Truffle Oil
    • Toppings - I used chives & sesame seeds, soft boiled eggs, micro greens and heirloom tomatoes

Instructions:

In a small bowl, use a spoon to scoop out and mash the avocado to a chunky paste (I prefer mine a little chunkier than your average guacamole).  Salt and pepper to taste (I also like adding a few drops of truffle oil).  Spread onto your toast, then add your toppings of choice.  Enjoy!!
