THE HEAT IS ON. Summer is in full blast, and along with the scorching sun and long beautiful days comes summer treats like ice cream, popsicles and ice cold fill-in-the-blank(s). AND, who could forget the all time classic...LEMONADE!
Also, if you'll be sipping on a sweet refresher, why not take it to the next level and make it healthy for you? With chia seeds as the latest and greatest superfood (seed) out there, I decided to add it to my lemonade - which turned it into a delightful dessert-like drink. It's incredibly easy to make, and if you're pressed for time you can always use your favorite pre-made lemonade like I did. Piece of (lemon) cake!
- Homemade or store bought lemonade or juice (I used Simply Lemonade with Raspberries, Simply Lemonade with Pineapple and Simply Orange with Mango from Central Market, $5 for 1.75 liter)
- Chia Seeds (I used The Chia Company white chia seeds, $25.22 for 35oz. tub)
Mix in 1 1/2 tablespoons per cup of juice. Shake or stir well and let it set in the fridge for 1-2 hours, occasionally shaking/stirring to prevent clumps. Then, ENJOY!!
